HONEY BERRY WAFFLES

Clean plates all round!​

A mixture of raspberries, strawberries and blueberries work well in this very easy and colourful pudding. If you can't get hold of fresh berries you can often find packs in the frozen section of the supermarket.

Ingredients
  • 1 1/2 cups of mixed berries
  • 1 tablespoon of butter
  • 1/3 cup of Haughton Honey
  • Vanilla ice cream
  • 8 fresh waffles
Notes for the cook

If you have a fan-assisted oven then reduce the specified temperature in the recipe by about 15%.

1 teaspoon = 5ml

1 tablespoon = 15ml.

Some ingredients are measured in cups and some equivalents are;

150g, 6oz (1/2 cup) = 120ml, 4fl oz.

Instructions
  1. Purée 1/2 cup berries in a blender or food processor; set aside. Melt the butter in small saucepan over medium heat. Add the honey and bring gently to the boil; simmer 2 to 3 minutes, then add the berry purée. Continue to simmer 2 to 3 minutes more until the syrup thickens slightly.
  2. Set the honey syrup aside and keep warm. For each serving, place 2 waffles on a plate. Top the waffles with 1/4 cup of fresh berries and a scoop of vanilla ice cream. Drizzle with 1/4 of the syrup and top.
